Chef and owner Tony Cosentino recommends beginning the romantic dinner with his Lobster Rockefeller appetizer topped with browned hollandaise and pancetta. For his entrée, he advises his Walnut Encrusted New Zealand Rack of Lamb with Maytag blue cheese demi-glace and sweet potato cakes. His wine selection is the Aia Vecchia 2010 red blend “Lagone, Toscana, Italy” ($45), which is based mostly on Merlot with some Cabernet Sauvignon and Cabernet Franc, and is “a great value in Italian wine with dense, assertive tannins that compliment red meat well. The earthy flavors of Italian wines pair nicely with lamb and game.” Dessert is his Mexican flour-less chocolate torte, which is a cinnamon, dark-chocolate torte with almond, milk-chocolate ganache frosting topped with a guava white-chocolate mousse.
